K vyjmut\u00ed drobn\u00fdch pecek bez po\u0161kozen\u00ed du\u017einy se pou\u017e\u00edv\u00e1 zkosen\u00e9 pero. Tuto pe\u010dlivou sez\u00f3nn\u00ed \u010dinnost prov\u00e1d\u011bj\u00ed dom\u00e1c\u00ed odstra\u0148ova\u010di semen. V\u00fdroba jednoho kilogramu ryb\u00edzu se semeny vy\u017eaduje t\u0159i hodiny pr\u00e1ce.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">K odstran\u011bn\u00ed drobn\u00fdch semen (v pr\u016fm\u011bru sedm na ryb\u00edz), ani\u017e by se po\u0161kodila du\u017eina plodu, se pou\u017e\u00edv\u00e1 zkosen\u00e9 pero namo\u010den\u00e9 ve vod\u011b. Do semene se provede \u0159ez a semena se zasunou do dut\u00e9ho stonku p\u00edrka. \u0158ez v ryb\u00edzu se pak zakryje chlopn\u00ed slupky, aby si ryb\u00edz zachoval svou k\u0159upavost a chu\u0165.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Ryb\u00edz se pot\u00e9 pono\u0159\u00ed do hork\u00e9ho cukrov\u00e9ho sirupu, aby se zachovala jeho chu\u0165. Zbytek receptu je dob\u0159e st\u0159e\u017een\u00fdm tajemstv\u00edm.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Na v\u00fdrobu sklenice o hmotnosti 85 gram\u016f, kter\u00e1 se v Bar-le-Duc prod\u00e1v\u00e1 za p\u0159ibli\u017en\u011b patn\u00e1ct eur a ve Spojen\u00fdch st\u00e1tech za \u010dty\u0159icet dolar\u016f (2008), je zapot\u0159eb\u00ed p\u0159ibli\u017en\u011b dv\u011b st\u011b ryb\u00edz\u016f.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Spole\u010dnost Dutriez z Bar-le-Duc, zalo\u017een\u00e1 v roce 1879, je posledn\u00ed, kter\u00e1 toto know-how je\u0161t\u011b vlastn\u00ed, a vyr\u00e1b\u00ed tento dnes velmi vz\u00e1cn\u00fd d\u017eem, kter\u00fd je k dost\u00e1n\u00ed p\u0159edev\u0161\u00edm v lah\u016fdk\u00e1\u0159stv\u00edch.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">\u010casto se pod\u00e1v\u00e1 jako p\u0159\u00edloha ke zv\u011b\u0159in\u011b a tak\u00e9 k foie gras. Je pova\u017eov\u00e1n za luxusn\u00ed potravinu a m\u00e1 v\u00fdjime\u010dn\u00e9 postaven\u00ed, kter\u00e9 ho \u010din\u00ed podobn\u00fdm kavi\u00e1ru &#8222;Beluga&#8220;, d\u00edky n\u011bmu\u017e si vyslou\u017eil p\u0159ezd\u00edvku &#8222;caviar de Bar-le-Duc&#8220;.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">7 &#8211; Melounov\u00fd d\u017eem<\/h3>\n\n\n\n<p class=\"wp-block-paragraph\">Melounov\u00fd d\u017eem, specialita cukr\u00e1\u0159\u016f ze z\u00e1padn\u00ed Provence. Vyr\u00e1b\u00ed se z d\u017ein\u016f a citronov\u00e9 k\u016fry.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Jej\u00ed v\u00fdroba, kter\u00e1 je ji\u017e dlouho dom\u00e1c\u00ed z\u00e1le\u017eitost\u00ed, se v sou\u010dasnosti prov\u00e1d\u00ed ru\u010dn\u011b.<br>Du\u017eina tohoto melounu na d\u017eem je nazelenal\u00e1 a obsahuje \u010derven\u00e1 semena, jeho du\u017eina je jemn\u00e1.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Tato okurka je pom\u011brn\u011b chud\u00e1 na vitam\u00edny a nem\u00e1 \u017e\u00e1dnou zvl\u00e1\u0161tn\u00ed v\u00fd\u017eivovou hodnotu. V okrese Apt se mu \u0159\u00edk\u00e1 &#8222;d\u017eem z citrusov\u00fdch plod\u016f&#8220; a v okrese Carpentras &#8222;d\u017eem z mer\u00e9villes&#8220;.<\/p>\n\n\n\n<h3 class=\"wp-block-heading\">8 &#8211; Ml\u00e9\u010dn\u00fd d\u017eem<\/h3>\n\n\n\n<p class=\"wp-block-paragraph\">Ml\u00e9\u010dn\u00fd d\u017eem je sladk\u00e1 kulin\u00e1\u0159sk\u00e1 specialita.
